Biscuits à la cuillère
- 5 egg yolks
- 125 g sugar
- 125 g flour
- 90 g confectioners sugar
- 8 egg whites (250 ml)
- Sprinkle:
- 35 g confectioners sugar
Method
Start by setting the oven to 180 degrees and then seperating the eggs. Add the 5 egg yolks to a bowl and mix in the 125 g sugar. Whisk for about 5 minutes. Sift in the flour and mix till it is a nice even mixture.
Whisk the egg whites till they peak in a separate bowl. 8 egg whites should make 250 ml. Otherwise add or remove as needed. Add 90 g of confectioners sugar.
Mix in 1/3 of the meringue mixture. Gently fold in the rest and immediately after add it to a pastry bag fitted with a round tip.
Make short lines on the baking sheet. Use all the batter at the same time.
Sprinkle the remaining confectioners sugar on top of the batter lines.
Bake in the 180 degree oven for 14 minutes.
