Chewy Caramel
- 5 dl 38% cream
- 70 g butter
- 100 g glucose syrup
- 260 g sugar
- 100 g brown sugar
- 1 tsp vanilla
Method
Combine cream, butter, glucose syrup, brown sugar and vanilla in a large pan. Let boil at a low to mid temperature for 30-45 minutes, until it starts looking like caramel. Stir occasionally, more so the last 15 minutes.
Once you reach 135 degrees the caramel is done. 115 for use in cake. 125 for softer caramel.
Pour into a wax papered pan. Cool till the next day. Cut into squares and wrap in candy wrappers. Store in an airtight container.
