Nicolai’s Jødekager
- 330 g flour
- 1/2 tsp hjortetaksalt
- 250 g butter
- 200 g sugar
- 2 egg yolks
- 1 egg white
- 3 tbs. sugar
- 1 tbs. cinnamon
- 50 g chopped almonds
Method
Mix the cold butter with the flour in a food processor using the knife, making the consistency look like grated cheese. Add sugar and egg yolgs by kneading them in gently without kneading too long.
Roll out into a sausage, wrap in cling film and put into the freezer for an hour to rest.
Cut into thin slices and brush with egg white before sprinkling cinnamon sugar and almonds on top.
Bake at around 200 degrees till light brown, around 5 minutes.
