Spiced Nut Waffles (Bundt Cake Flavor) Belgian Style
- 220 g butter, melted and slightly cooled
- 200 g sugar
- 2 cups (250 g) flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ tsp nutmeg
- ½ tsp cardamom
- 1 cup (2.5 dl) buttermilk
- 2 large eggs
- ½ cup (60 g) finely chopped walnuts
- ½ cup (60 g) finely chopped almonds
- Optional: 1 tsp vanilla extract
- Spiced Glaze / Topping (optional):
- 1 cup (120–150 g) powdered sugar
- 2–3 tsp milk
- ½ tsp cinnamon
- ¼ tsp cloves
Method
1. Preheat waffle iron.
2. In a large bowl, whisk together flour, baking powder, baking soda, salt, nutmeg, and cardamom.
3. In another bowl, whisk eggs, sugar, buttermilk, melted butter, and vanilla until smooth.
4. Add the wet ingredients to the dry ingredients and gently mix until combined — don’t overmix.
5. Fold in chopped nuts.
6. Spoon batter into the preheated waffle iron and cook according to your waffle iron’s instructions (usually 3–5 minutes) until golden and crisp.
7. Serve warm with optional spiced glaze, drizzle of honey, or maple syrup.
