Baked Spring Rolls
- 1/2 head cabbage, shredded
- 2 carrots, grated
- 1 zucchini, spiraled
- 1 onion, chopped
- 2 cloves garlic, chopped
- 1 tbs olive oil
- 1 tsp curry
- 1 tsp cumin
- 1 tbs soy sauce
- 300 filo dough
- 3 tbs olive oil
Method
Sauté onion, garlic, carrots, cabbage and zucchini on a pan with olive oil. Add soy and spices, and add a little salt and pepper. Cool to room temperature.
Separate the filo sheets, brush one sheet at a time with olive oil and fill with two table spoons of filling. Fold together, making a spring roll. Place on a baking tray. Brush a little olive oil on top as well.
Continue till all the dough and stuffing has been used.
Bake at 175 degrees with the fan for 20 minutes, or until they are golden and crunchy. Serve with rice.
