Home Made Sprinkles
- 1 egg white (or 30 g pasteurized egg white)
- 200 g powdered sugar
- 1 tsp extract (vanilla or other)
- Gel food coloring, as needed
Method
1. Make the base
Mix the egg white with the powdered sugar until you get a thick icing-like paste.
It should hold its shape when piped.
• If too runny, add more sugar.
• If too thick, add a few drops of water or egg white.
2. Add color
Divide the mixture if you want multiple colors and mix in gel food coloring.
3. Shape the sprinkles
Transfer the mixture to a piping bag with a small round tip (No. 1, 2, or 3). Pipe onto parchment paper:
• Long lines (cut later into strands)
• Small dots (confetti)
• Small shapes (use templates if needed)
4. Dry
Let dry at room temperature for 12 to 24 hours until fully hard.
5. Cut (optional)
If you made long lines, cut them into small pieces with a knife or spatula.
6. Store
Keep in an airtight container. They last for several weeks.
