Morning 10-Hour Pizza Dough
- • 625 g flour (≈10 dl / 1 liter)
- • 450 g water
- • 40 g olive oil
- • 2 tsp salt
- • 3 g yeast
Method
1. Dissolve the yeast:
• Mix the yeast into the water.
2. Combine ingredients:
• Add the remaining ingredients (flour, olive oil, salt) to the yeast-water mixture.
3. Knead the dough:
• Knead for about 5 minutes. A stand mixer works well.
4. First rise:
• Let the dough rise for about 8 hours while you are at work.
5. Divide and shape:
• Divide the dough into 4 equal portions.
• Shape each portion into a ball.
6. Second rise:
• Let the dough balls rise for another 2 hours.
