Yellow Butter Cupcakes
- 220g all-purpose flour
- 340g sugar
- 3 1/2 tsp baking powder
- 1 tsp salt
- 110g butter, softened
- 240ml milk
- 2 tsp vanilla extract
- 3 eggs
Method
Preparation time: 15 minutes Baking time: 160° 25-30 minutes
Preheat oven to 160°. Spread out the cupcake liners either in a cupcake pan or on a baking tray. Combine all ingredients in a large mixing bowl. Beat at medium speed for 30 seconds, scraping bowl constantly until blended. Pour into the cupcake liners, till they are half full and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
If made in a cupcake tray, cool for 10 minutes, then remove onto a wire rack. If made in liners only, cool completely on a wire rack.
