Fito’s Roasted Red Pepper Pasta
- 500 g pasta
- Olive Oil
- 3 red bell peppers
- 2 jalapeño peppers
- 1 red onion
- 4 cloves of garlic
- 50 g butter
- 1 cup bouillon
- 1 cup cream
- Pasta water
- Parmesan cheese
- Salt & pepper
- Fresh parsley
Method
Roast the peppers in the oven till they blacken. Put into a ziplock for a bit.
Start cooking the pasta. Set aside one done.
Meanwhile fry onion and garlic. Set aside. Take out and peel off the skin of the peppers.
Blend onions and peppers. Add butter to a pan, pour blended peppers into pan, add the bouillon and cream. If needed add pasta water.
Add cheese and salt and pepper to taste.
Garnish with parsley and cheese.
