Mom’s Icelandic Pancakes
- 5 eggs
- 200 g flour
- 2 tbs sugar
- 500 g milk
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 75 g melted butter
Method
To create these delicious Icelandic pancakes, first, mix the ingredients, all in one go. Next, take out your Icelandic cast iron pancake pan with a thick bottom, which will allow you to bake the pancakes quickly and at a high temperature.
Melt the butter in the pan, ensuring it coats the surface evenly. Once melted, let the butter cool for a moment, then pour it into the thin pancake batter, stirring well.
Don't be tempted to wipe off the pan before you start baking the first pancake. Instead, pour a small amount of the batter onto the hot pan, and then quickly pour the remaining batter back into the bowl. What sticks to the pan, is a thin layer that's just about a millimeter thick.
Return the pan to the heat, and after only a few seconds, the pancake will be golden brown on the bottom, ready to be flipped. Cook the other side until it's also a beautiful golden color, then remove the pancake from the pan and stack it with the others.
Serve the pancakes with sugar and jam, and for an extra special treat, roll them up with sugar inside. Your guests will love the delicious flavor and texture of these delightful Icelandic pancakes!
