Potato Leek Soup

  • Ingredients
  • 1 kg potatoes, peeled, cubed
  • 3 leeks, cut in 1 cm slices
  • 1 clove garlic
  • 1 tbs olive oil
  • 1.2 l vegetable bouillon
  • 1/2 dl cream
  • Black pepper
  • Salt

Method

    Peal the potatoes, cut into cubes.
    Sauté potato cubes, garlic and leek in the olive oil for a few minutes whilst stirring.
    Add the bouillon. Cover with a lid and let it cook for 20 minutes or till the potatoes are fully cooked.
    Mix with a blender. Add the cream last, followed by pepper and salt as needed.
