Potato Leek Soup
- 1 kg potatoes, peeled, cubed
- 3 leeks, cut in 1 cm slices
- 1 clove garlic
- 1 tbs olive oil
- 1.2 l vegetable bouillon
- 1/2 dl cream
- Black pepper
- Salt
Method
Peal the potatoes, cut into cubes.
Sauté potato cubes, garlic and leek in the olive oil for a few minutes whilst stirring.
Add the bouillon. Cover with a lid and let it cook for 20 minutes or till the potatoes are fully cooked.
Mix with a blender. Add the cream last, followed by pepper and salt as needed.
