Sourdough Bread
- 325 g water
- 150 g sourdough
- 490 g flour
- 50 g graham flour
- 15 g salt
- A bit of olive oil
Method
Mix the water and the sourdough. Add flours and salt. Mix for 5 minutes in the mixer. Let the dough rise over night.
Pour our the dough onto a floured piece of wax paper. Transfer to the oven and bake on a pizza stone.
Bake for 10 min at 250 degrees, then turn the temperature down to 200 degrees for another 10 minutes.
Other option:
Rise for 8 to 10 hours, then put in the fridge for 24 hours. Deflate and let rise for another 10 to 12 hours.
